You can imagine how excited I was a few weeks back when Kate Bittman asked if her dad could interview me on his podcast. He had come across my work via an article I wrote for the Asterisk, which happened to be shared across a newsletter that he followed. Despite having written about food for over 4 decades, focusing on plant-forward for the later half of that, Mark had never encountered so many varieties of tofus. It felt wild being able to contribute a few nuggets.
